Bacon and leek hashbrown frittata

Who doesn’t love brunch?

Mornings spent with family and friends, long talks and even longer coffees and of course, food!

I made this Bacon and leek hash brown frittata a few days ago as I needed a lot of egg shells to decorate the house for Easter and it’s so good!! It’s great for brunch or a even a picnic , it’s super easy and you can even make it the night before!

All you need is:

4/5 large eggs

4 big potatoes

2 leeks

1 pack of smoked bacon

Heat a pan with olive oil.

Grate the potatoes and fry them. When they are golden transfer them to a bowl. Chop the leeks and bacon, fry until golden and add them to the potato mix.

Add the eggs one by one to the potatoes, leeks and bacon, and you’ll see if you need 4 or 5, I like the mix not too eggy because if not is more of a soufflé than a frittata.

Pre heath the oven  to 190 degrees, pour the mix on a baking dish and bake the frittata for 15/20 or until the top is crispy.

And now it’s time to enjoy your brunch.
